Production by cold extraction

Extra virgin means that the fully ripe olives are carefully picked by hand from the tree and transported undamaged from the olive farmers to the oil mill after a few hours. There, only the best olives are sorted out, freed from twigs and branches, processed without chemical additives and gently pressed (temperature below 27°C.). This process is called cold extraction. In this process, the fruit water is immediately separated from the extracted oil. This process is better and more modern than the previously known cold pressing, because it is gentler and thus the valuable nutrients and the natural aroma are better preserved.

Our Minotaur of Crete extra virgin Cretan olive oil is extracted exclusively from the famous variety of the Koroneiki olive, which was already known in ancient times, and is one of the finest olive oils in the world. The Koroneiki olive captivates with its fine aroma and fruity taste. The fully ripe olives are carefully picked by hand by olive farmers, transported in baskets and brought directly to the mill.

Olive oil has been used for cooking and frying in Mediterranean cuisine for thousands of years! However, virgin olive oil should not be heated above 180 degrees.

What is the best way to store olive oil?

Olive oil is sensitive to light! For this reason, our olive oil is bottled exclusively in canisters. This is protected from light, which ensures that the olive oil retains its purity.

Olive oil is also sensitive to temperature! The ideal storage temperature is between 14-20 °C.

How long does the olive oil last?
