Allspice seeds look like dark brown berries and are the unripe dried fruits of the allspice tree. Christopher Columbus brought them to Europe and gave them their name. Allspice seeds have a taste reminiscent of pepper, cloves, cinnamon and nutmeg and are particularly popular in the Caribbean. They have a warm, spicy and slightly peppery aroma.
Allspice harmonises with bay leaf, chilli, nutmeg and garlic. Allspice seeds are cooked with the food and removed before serving. As they have an intense aroma, they should be used sparingly.
